Marktpotential und Kundenakzeptanz für unvollkommenes Obst und Gemüse: Ergebnisse von Verkaufstests im Öko-Handel
Organic fruits and vegetables with visual defects often cannot be marketed regularly. Most of them remain on the fields leading to increased food waste. With sales tests of suboptimal carrots and apples in organic retail using an automated measurement of the box filling level, we investigated consumer acceptance and tested the influence of an informative and emotional communication strategy. The sales tests indicate high market potential for products with minor visual defects while products with clear visual defects remain almost unsaleable. The two communication strategies tested slightly increased the sales of suboptimal products, whereby no difference between the strategies is evident. The box filling level shows a significant influence on the purchase decisions.
